  6. Potatoes are cooked with their skin on
    If you have to cook a whole potato, do it with the skin, this way it doesn’t break or crumble and, above all, it doesn’t pick up a lot of salt. For stews or frying it is better to peel them but, for other preparations, better with the skin.
  7. Take the eggshells
    It is normal that, when cracking an egg, a small piece of shell falls out. It is also normal to get desperate trying to remove it with your fingers over and over again. Don’t do it, use another piece of peel to remove it.
  8. Be careful with minced garlic
    Chopped garlic gives an excellent flavor to our dishes but it burns very easily and can therefore alter it. It is better, in stir-fries, to add it at the end or after other ingredients.
  9. Brown the vegetables well
    If you want to brown vegetables, it is best not to brown them too much. Use a high heat and keep an eye on them, but for them to brown, they must be in contact with the pan.
  10. The sofrito
    Stir-fries make any broth, stew or stew taste much better, so get used to making them. It can be whatever you want , with ingredients that go well with your dish: shallots, carrots, peppers, onions, tomatoes… with a little salt and some spices.
